Why Two Products with the Same Moisture Can Fail Differently

It's a common assumption that if two products have the same moisture content, they should behave the same. In practice, that's rarely true. Products with identical moisture content can have very different shelf life, stability, and safety outcomes, and the reason comes down to how water is held within the product.

Some water is tightly bound to ingredients like sugars, salts, proteins, and fibers, while other water is free or loosely bound and able to drive microbial growth, chemical reactions, and physical changes. Water activity measures that availability directly. If one product has more free water than another, even at the same total moisture level, it will be more susceptible to spoilage, mold growth, or degradation. Formulation plays a major role here, since ingredient selection, ratios, and processing conditions all affect how water interacts within the product matrix, and so does packaging, since moisture migration over time can shift water activity without significantly changing moisture content.

Understanding water activity lets manufacturers predict these outcomes instead of discovering them after launch. Teams that rely on moisture content alone tend to react to failures; teams that understand water activity prevent them.
