Texture changes

What it looks like

Products slowly lose the texture they were designed to have. Crispy foods soften, soft products harden, and layered products become uneven. Texture may change during storage or while products move through distribution.

Why it happens

Moisture moves between the product and its surroundings or between different parts of the product. Over time, the product shifts toward a new moisture balance. As moisture changes, texture changes with it.
